Ready, Set, BARBECUE!

The King of Barbecue..

The first thing I do the day of the barbecue is to get my meat all ready for the grill. I usually do this at least an hour before I'm ready to put the meat on.

While I've tried many rubs, my all time favorite comes from the Food Network star, Emeril. Since it is not copyrighted (You can't copyright recipes, only the prep information,) I present to you, Emeril's Rustic Rub:

Rustic Rub
4 Tbsp. Paprika
1-1/2 Tbsp. Cayenne Pepper
2-1/2 Tbsp. Fresh Ground Pepper
3 Tbsp. Garlic Powder
1-1/2 Tbsp. Onion Powder
3 Tbsp. Salt
1-1/4 Tbsp. Dried Oregano
1-1/4 Tbsp. Dried Thyme
I seal mine up in a tight shaker type bottle, and unless I'm really bangin' out the barbecue, this is enough to last me a couple of months.

My oldest, his wife & the two kids are headed out to California next week, so we're going to have them over this weekend for steak. While the steaks will have the definate taste of slow-smoked beef, I'm using my Super Duper Secret Ingrediant that will give them the rich, sweet taste of slow Hickory Smoked meat.
I'll cook the steaks the indirect method using lump charcoal and my SDSI. The whole thing will only take about ten minutes longer than usual. :)
At any rate, you can bet that it'll be another great barbecue in the kingdom of The King of Barbecue.
